The kitchen was very much the center of our home. It was where our family had dinner together on weekdays, where my brother and I did our homework and where we helped my mom cook for Shabbat, holidays and other special meals. I often remember going into the kitchen when my mother was cooking one of her many specialties and asking her what she was cooking. She taught my brother, my father and I how to cook and from the time we were little we always helped her cook various meals.&lt;br /&gt;&lt;br /&gt;I will never forget being in the kitchen before holidays like Rosh Hashana and Passover and making ‘Rosh Hashana cookies’, carrot kugel and matzo lasagna. As most of you know my mom wrote recipes down anywhere she could and I know she would have loved to see her recipes all together in an organized format. I will never forget all the things my mother taught me about cooking and life in general. I only hope that I can be as good a cook as my mother was. Container heavy cream&lt;br /&gt;1 stick Butter or margarine&lt;br /&gt;Salt and pepper to taste&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;What to do?&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Boil Fettucini noodles according to directions on box and drain. In a small saucepan melt 1 stick of butter or margarine with cream over low heat heat. Drain pasta and into warm bowl. Pour butter and cream over noodles and toss. Toss in 1 cup of Parmesan grated cheese. Sprinkle with salt and pepper. Refrigerate dough 2 - 3 hours (form dough into a ball, wrap). Use 1/3 dough at a time and keep rest refrigerated. Roll out and round. Mix well. Pour onto shell. Top with pecans and bake at 350 for 40 minutes or until knife inserted comes out clean. Chill. In addition to Jelly, they used to use chocolate chips as a flavor.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(0, 0, 153);"&gt;Ingredients:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;3/4 cup Soft Shortening&lt;br /&gt;1 cup Sugar&lt;br /&gt;2 Eggs&lt;br /&gt;1/2 teaspoon flavoring (vanilla or lemon)&lt;br /&gt;2.5 cups Sifted Flour&lt;br /&gt;1 teaspoon Baking powder&lt;br /&gt;1 teaspoon Salt&lt;br /&gt;Jelly or Jam (flavor as desired)&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; color: rgb(255, 0, 0);"&gt;What to do?&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Mix shortening, sugar, eggs and flavoring together. Add flour, baking power and salt. Chill 1 hour. Roll out 1/8" thick. Cut in squares. Place 1 teaspoon of jam or jelly in the center of each square and pinch sides together to form triangular shape. Place on greased baking sheet. This dish is how I first started liking spinach. I tasted it at a friend’s house and Maxine started making it once in a while after she found out I liked spinach.&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color:#33cc00;"&gt;Makes 30 Pieces&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#993399;"&gt;Ingredients:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;4 10-oz. boxes frozen spinach&lt;br /&gt;2 T butter plus 1¼  cup melted&lt;br /&gt;¼ cup olive oil&lt;br /&gt;1 bunch scallions, chopped fine&lt;br /&gt;1 large yellow onion, chopped fine&lt;br /&gt;½ cup fresh dill, chopped fine&lt;br /&gt;1/3 bunch fresh parsley, chopped fine&lt;br /&gt;1 lb. creamed cottage cheese&lt;br /&gt;1½ lbs. feta cheese&lt;br /&gt;8 large eggs&lt;br /&gt;1 lb. prepared phyllo dough&lt;br /&gt;¼ cup grated romano cheese&lt;br /&gt;½ t salt&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#33cc00;"&gt;What to do?&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Cook thawed spinach in boiling salt water for 5 minutes. Remove from heat, drain and press out the liquid. In a small frying pan, melt 2 T butter with ¼ cup olive oil and add scallions, yellow onion, dill and parsley and sauté until golden brown. In a large mixing bowl, combine crumbled feta and cottage cheese, drained spinach, onion mixture and 8 slightly beaten eggs. Mix well.&lt;br /&gt;Melt remaining butter in a small saucepan. With a pastry brush, butter a 17 by 11½ by 2¼ inch baking pan. Place 1 phyllo sheet in pan and allow the phyllo to overlap sides of the pan. Add another sheet and using pastry brush, brush lightly each phyllo sheet with melted butter. Repeat procedure until there are 12 layers of buttered phyllo sheets on the bottom of the pan. Pout spinach/cheese mixture slowly over phyllo sheets in pan and spread evenly. Sprinkle grated cheese and ½ t salt over spinach. Repeat procedure for brushing each phyllo sheet until the remaining phyllo sheets (about 12 sheets) have all been used. Top phyllo sheet should be brushed heavily with butter to assure golden brown color. With a sharp knife gently cut through the layers of the phyllo, making 6 lengthwise cuts. Bake in a 350 degree oven for 1 hour. She definitely knew it was one of our favorites!&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#993399;"&gt;Ingredients:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 can of cream of mushroom soup&lt;br /&gt;½ cup milk&lt;br /&gt;1 cup cooked peas&lt;br /&gt;2 T chopped pimiento (optional)&lt;br /&gt;2 cans (about 6 oz. each) tuna, drained and flaked&lt;br /&gt;2 cups hot cooked medium egg noodles&lt;br /&gt;2 T dry bread crumbs&lt;br /&gt;1 T margarine, melted&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#33cc00;"&gt;What to do?&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;In 2 quart casserole dish mix soup, milk, peas, pimiento, tuna and noodles and bake at 400 degrees for 20 minutes or until hot. Partially bake pie shell until golden, about 20 minutes. Remove from oven. Reduce temperature to 350 degrees/ Combine cottage cheese, swiss cheese, eggs, onion, salt and pepper and heat well. Put mixture into pie shell. Bake 30 minutes. Remove from oven and sprinkle with crushed onion rings. Bake an additional 10-15 minutes. Otherwise, cook the barley until tender, along with the bay leaf and black pepper in the broth. The barley will take about an hour and a half to cook. After the first hour and 10 minutes, add the bell pepper and mushrooms and cook for another 20 minutes. Rinse Pinto beans in cold water and add them to the onion along with 4 cups of water or stock, celery seed and bay leaf. Partially cover the pot and cook for about 1 hour. Wash and add kidney beans and lima. Add more liquid if much has boiled away. Cook another hour still partially covered. Rinse and add split peas, dill, salt and pepper. Be sure there is enough liquid to keep soup soupy. Cook another hour, partially covered. For many bean stew, you can add chunks of celery, carrot and potato or whatever vegetables you like halfway through this hour. Sauté potatoes and carrots in oil for 5 or so minutes. Add 8-10 cups of the soup mix and simmer for 30 minutes all together. Puree and then add more of the soup stock depending on how thick you like it. Bring to a boil and add 2 teaspoons of curry powder and some salt and pepper Honey is also a nice touch! Cook for another 10 minutes or so so the spices are well absorbed.
