Mandlebrot

Ingredients:

3 Eggs
3/4 cup Oil
1 cup Sugar
3 cups Flour
1 teaspoon Baking powder
1 teaspoon cinnamon (more if you like cinnamon)
salt
Sliced almonds (can use pecans instead) - enough to be evenly distributed throughout batter

What to do?

Mix eggs, oil, and sugar. Sift flour, salt, baking powder and cinnamon and add it to mixture. Spread on ungreased cookie sheet. Bake at 350 degrees for 30 minutes or until golden brown. Cool, turn, toast sides after slicing.

Sugar Cookies

Ingredients:

3.25 cups Flour
1.5 cups Sugar
2/3 cups shortening
2 eggs
2 Tablespoons milk
2.5 teaspoons Baking powder
1 teaspoon vanilla
1 teaspoon salt

What to do?

mix all ingredients at low - Then beat at medium for approximately 4 minutes. Refrigerate dough 2 - 3 hours (form dough into a ball, wrap). Use 1/3 dough at a time and keep rest refrigerated. Roll out and round. Bake for 8 minutes at 400 degrees.

Hamantashen Recipie

Maxine spent many Purims making Hamantashen with help from Ami and Davida. In addition to Jelly, they used to use chocolate chips as a flavor.

Ingredients:

3/4 cup Soft Shortening
1 cup Sugar
2 Eggs
1/2 teaspoon flavoring (vanilla or lemon)
2.5 cups Sifted Flour
1 teaspoon Baking powder
1 teaspoon Salt
Jelly or Jam (flavor as desired)

What to do?

Mix shortening, sugar, eggs and flavoring together. Add flour, baking power and salt. Chill 1 hour. Roll out 1/8" thick. Cut in squares. Place 1 teaspoon of jam or jelly in the center of each square and pinch sides together to form triangular shape. Place on greased baking sheet. Bake until golden - about 6 to 8 minutes at 400 degrees.

Carrot Cake

One of Ami's favorite desserts!

Ingredients:

1 cup Oil
2 cups Sugar
4 Eggs
1 teaspoon Vanilla
2.5 cups Flour
2 teaspoon Baking Powder
1.5 teaspoon Baking Soda
1/2 teaspoon Salt
2 teaspoon Cinnamon
1 lb grated carrots

What to do?

Beat oil and sugar. Add eggs one at a time, beating all the time. Add vanilla and mix. Sift dry ingredients and Add to above. Add carrots and mix well. Put in 3 x 9 inch greased and floured pans. Bake at 350 degrees for 30 minutes.

Frosting:

1 8 oz. Cream Cheese
4 Tablespoon Margarine
1 Tablespoon Vanilla
3 cups confectioners sugar

What to do?

Cream the Cream cheese and Margarine and heat vanilla and confectioners sugar in the mixture.
