Ingredients:
3 Slightly beaten eggs
1 cup Canned pumpkin
1 cup Sugar
1/2 cup Dark corn syrup
1 t Vanilla
1/2 teaspoon Cinnamon
1/4 teaspoon salt
1 cup Chopped pecans
1 unbaked quiche shell
What to do?
Combine eggs, pumpkin, sugar, syrup and spices. Mix well. Pour onto shell. Top with pecans and bake at 350 for 40 minutes or until knife inserted comes out clean. Chill. Top with whipped cream.

Cranapple Dowdy
This recipe was given to Maxine by Joan Vanderwalde and Phyllis Lauer.
Ingredients:
3 to 4 apples peeled and sliced.
1 can of whole berry cranberry sauce.
Breadcrumbs
½ cup flour
2/3 cup brown sugar
2/3 cup margarine
1 cup oatmeal
What to do?
Put the apples on the bottom of a baking dish. Pour the cranberry sauce on top of the apples. Put the breadcrumbs on top of the sauce. Combine flour, brown sugar, margarine, and oatmeal and put as the top layer in the baking dish. Bake uncovered at 350 degrees for 45 minutes.

Eggplant Parmigiana
Serves 4 to 6 people
Ingredients:
1 medium eggplant
Flour
1 egg beaten with some milk
Dried breadcrumbs
Olive oil
½ lb. shredded mozzarella or sliced swiss cheese
6 oz. tomato paste
Oregano
Garlic clove
Salt and pepper
1 cup parmesan cheese
What to do?
Wash the eggplant and without peeling it, slice ¾ inch thick. Dip the eggplant in flour, then in the egg, then the breadcrumbs and saute in oil. Arrange in baking pan and put a slice or two of swiss cheese or mozzarella. Make tomato sauce by mixing tomato paste with oregano, salt, pepper, garlic clove and spread tomato sauce on the cheese. Spread parmesan on top and bake at 400 degrees for 15 minutes.

Blintze Souffle
Once Maxine discovered this recipe it became a staple for many dairy meals and a family favorite.

12 frozen blintzes
½ cup orange juice
6 eggs
1 cup sour cream
1 t vanilla
½ cup sugar
A pinch of salt
½ to ¾ stick margarine or butter
What to do?
Grease a large baking dish big enough to hold all the blintzes. Blend all the ingredients together and pour the mixture over the blintzes. (You do not have to thaw the blintzes) Sprinkle with cinnamon and bake 1 hour at 350 degrees.

Spanakopita (Spinach Pie)
It’s a long recipe but very worth it in the end. This dish is how I first started liking spinach. I tasted it at a friend’s house and Maxine started making it once in a while after she found out I liked spinach.
Makes 30 Pieces
Ingredients:
4 10-oz. boxes frozen spinach
2 T butter plus 1¼ cup melted
¼ cup olive oil
1 bunch scallions, chopped fine
1 large yellow onion, chopped fine
½ cup fresh dill, chopped fine
1/3 bunch fresh parsley, chopped fine
1 lb. creamed cottage cheese
1½ lbs. feta cheese
8 large eggs
1 lb. prepared phyllo dough
¼ cup grated romano cheese
½ t salt
What to do?
Cook thawed spinach in boiling salt water for 5 minutes. Remove from heat, drain and press out the liquid. In a small frying pan, melt 2 T butter with ¼ cup olive oil and add scallions, yellow onion, dill and parsley and sauté until golden brown. In a large mixing bowl, combine crumbled feta and cottage cheese, drained spinach, onion mixture and 8 slightly beaten eggs. Mix well.
Melt remaining butter in a small saucepan. With a pastry brush, butter a 17 by 11½ by 2¼ inch baking pan. Place 1 phyllo sheet in pan and allow the phyllo to overlap sides of the pan. Add another sheet and using pastry brush, brush lightly each phyllo sheet with melted butter. Repeat procedure until there are 12 layers of buttered phyllo sheets on the bottom of the pan. Pout spinach/cheese mixture slowly over phyllo sheets in pan and spread evenly. Sprinkle grated cheese and ½ t salt over spinach. Repeat procedure for brushing each phyllo sheet until the remaining phyllo sheets (about 12 sheets) have all been used. Top phyllo sheet should be brushed heavily with butter to assure golden brown color. With a sharp knife gently cut through the layers of the phyllo, making 6 lengthwise cuts. Bake in a 350 degree oven for 1 hour. Let cool for 2 minutes, then cut into diamond shaped pieces.

3-4 boiled sweet potatoes
1 stick margarine
1 cup sugar
1 t vanilla
1 t lemon extract
3 eggs
1 T flour
6 oz. coffee rich
6 oz. water
What to do?
Put all ingredients in a food processor and put mixture in pie crusts. Bake at 350 degrees for 45 minutes to 1 hour.

2 t. paprika

1 packet GW seasonings
What to do?
Saute all the vegetables. Put the barley on the bottom of the casserole dish and put ½ cup of water in the dish as well. Put seasoning and all sautéed vegetables on top and pour lemon juice and spices on top of the vegetables. Cover the casserole dish and bake at 400 degrees for 1 hour.

Tuna Noodle Casserole
I clearly remember my mother making this dish for the four of us for a typical family dinner during the week. She definitely knew it was one of our favorites!
Ingredients:
1 can of cream of mushroom soup
½ cup milk
1 cup cooked peas
2 T chopped pimiento (optional)
2 cans (about 6 oz. each) tuna, drained and flaked
2 cups hot cooked medium egg noodles
2 T dry bread crumbs
1 T margarine, melted
What to do?
In 2 quart casserole dish mix soup, milk, peas, pimiento, tuna and noodles and bake at 400 degrees for 20 minutes or until hot. Stir and sprinkle bread crumbs mixed with margarine over tuna mixture. Bake for 5 more minutes or until bread crumbs are golden.

3lbs. butternut squash, cooked and mashed (about 3 cups)
¼ cup milk
2 T flour
1/8 t salt
1 T sugar
1/2 t grated lemon peel
½ t grated orange peel
2 T margarine
2 eggs, beaten
What to do?
Bake whole squash at 400 degrees for about 1 hour (or slice and microwave on high about 10-15 minutes). Discard seeds and scoop out pulp. Mash and mix squash and remaining ingredients. Place in greased casserole and bake at 350 degrees uncovered for 50 minutes or until firm in the center.
