Makes 2 loaves
Ingredients:
3 cups all purpose flour
1 tablespoon baking powder
1½ teaspoon baking soda
1 ½ teaspoon salt
2 eggs
1 cup sugar
2 cups of whole cranberry sauce, fresh or canned
½ cup orange juice
½ cup melted butter or margarine
2 tablespoons finely grated orange zest
½ cup chopped walnuts
What to do?
Preheat oven to 350 degrees Fahrenheit. Grease and flour two 8 ½ by 4 ½ by 2½ inch loaf pans. Stir and toss together the flour, baking powder, baking soda, and salt. Place eggs, sugar, cranberry sauce, orange juice, butter, orange zest, and walnuts in a large mixing bowl and mix well. Add the combined dry ingredients and beat just until the batter is smooth. Divide the batter evenly between the prepared pans and bake for about 50 to 55 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool in the pans for about 5 minutes, then turn out onto a rack to cool completely.

Cranberry Nut Bread
Ingredients:
1 cup of fresh of frozen cranberries, chopped
½ cup chopped nuts
1 tablespoon grated orange peel
2 cups of all purpose flour
1 cup of sugar
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
2 tablespoon shortening
¾ cup orange juice
1 egg well beaten
What to do?
Preheat the oven to 350 degrees. Grease and lightly flour a 9 by 5 by 3 inch loaf pan. Prepare cranberries, nuts and orange peel. Set aside. In a bowl mix together flour, sugar, baking powder, salt, soda, and shortening. Stir in orange juice, egg and orange peel mixing just to moisten. Fold in cranberries and nuts. Spoon into prepared pan. Bake 60 minutes or until wooden pick inserted in center comes out clean. Cool on a rack for 15 minutes. Remove from pan, cool completely, wrap and store overnight.

San Diego Sunshine Bread
Ingredients:
2 teaspoons of red star yeast
2 cups flour
1 cup whole wheat flour
1 teaspoon salt
2 tablespoon brown sugar
2 tablespoon margarine
orange rind-dash
1 cup water
What to do?
Put the bread machine on the sweet bread setting. Will go up to 2/3 of the pan. Take out, pam spray the pan, shape it into a loaf. Leave it in the oven for an hour at least. Bake it at 350 degrees for 22 minutes or until it is golden brown.

Lemon Loaf
Can be dairy or pareve
Ingredients:
6 tablespoons of butter or margarine
1 cup sugar
2 eggs beaten
1 ½ cups sifted all purpose flour
1 teaspoon baking powder
pinch of salt
½ cup milk or coffee rich
grated rind of 1 lemon
juice of 1 large lemon
½ cup sugar
What to do?
Cream together the sugars and butter (or margarine). Add the beaten eggs and blend well. Sift together the flour, baking powder and salt and stir into the egg mixture alternatively with the milk (or coffee rich) - stir in the lemon rind. Beat well. Pour into a greased loaf pan (8 by 4 by 4) and bake in a preheated oven at 325 degrees for 45 minutes.

Maxine received this recipe from her good friend Sherrie Schulman and it truly became a family favorite.
Add the following ingredients in the following order:
2 ¼ teaspoon of yeast
2 ½ cups flour to 3 cups of flour
½ teaspoon salt
5 tablespoons of sugar
1 tablespoon of oil
1 cup of water 105 to 125 degrees Fahrenheit (usually around 115 degrees Fahrenheit)
1 egg and 1 egg white
little cinnamon and nutmeg
What to do?
Put the above mix into the bread machine on the sweet bread-manual.
Take out and divide into 2. Make 5 smaller balls of dough and 1 larger one.
Put in a 6 inch aluminum foil pan.
Put in a warm place to rise for 30-45 minutes.
Finally, put it in the oven on 350 degrees for 20 to 30 minutes.
