Crustless Asparagus Quiche

Makes 4 Servings

Ingredients:

½ cup minced celery
2 T minced Shallot or onion
18 asparagus spears, blanched and cut into 1 inch pieces
6 eggs
1 cup lowfat milk
½ cup plain low fat yogurt
¼ pound gruyere or another type of cheese, shredded and divided
2 T chopped Italian parsley
¼ t each salt and red pepper
1 T plus 1 t grated parmesan cheese

What to do?

Preheat oven to 350 degrees. Spray non stick skillet with non stick cooking spray; add celery and shallot (or onion) and cook over medium heat, stirring occasionally, until softened, about 2 minutes. Add asparagus and cook, stirring occasionally, 1 minute longer. Spray 9 inch pie plate with non stick cooking spray and arrange vegatables in plate. Set aside and let cool. In medium bowl, beat together eggs, milk, yogurt, 3 ounces of gruyere cheese, the parsley, salt, and pepper and pour into pie plate. Combining remaining cheese; sprinkle over quiche. Bake for 35 minutes (until a knife inserted in centre comes out clean).

Squash Quiche

Ingredients:

(4 to 6 Servings)
Crust for a 9 inch quiche pan
½ cup grated Swiss cheese
½ cup of another type of grated cheese
½ cup grated cheddar cheese
1 tiny zucchini, peeled and sliced
1 tiny yellow squash, peeled and sliced
1 small onion, diced
1 T olive oil
2 eggs
½ cup sour cream
Salt and Pepper to taste
1 t fresh savory (spice), chopped
1 t fresh parsley, chopped

What to do?

Mix cheeses together and sprinkle ¾ cup in bottom of crust. Sautee zucchini, yellow squash and onion in olive oil for 3 minutes (just to get them started cooking). Spread on top of cheese. Mix together eggs, sour cream, remaining cheese, salt and pepper, savory (spice) and parsley and spread on top of quiche. Bake in a 350 degree oven for 35 to 40 minutes or until set and knife inserted in the center comes out clean.

Sari’s Dairy Quiche

Sari Kronish gave my mom this Kronish family recipe and she really enjoyed making it and we loved eating it.

Ingredients :

1 large plain yogurt
3 eggs
1 T flour
1 T onion soup mix
½ bag grated cheddar cheese

What to do?

Mix it all together and put it in pie shell. Cook uncovered for 1 hour at 350 degrees. During the last minutes turn up the oven temperature so it gets brown.

Cottage Cheese Quiche

Ingredients:

1-9 inch unbaked pie shell
2 cups of cottage cheese
½ cup of grated swiss cheese
2 eggs
A small grated onion
Salt and Pepper
A ½ of a 3 ounce can of French fried onions

What to do?

Preheat oven to 400 degrees. Partially bake pie shell until golden, about 20 minutes. Remove from oven. Reduce temperature to 350 degrees/ Combine cottage cheese, swiss cheese, eggs, onion, salt and pepper and heat well. Put mixture into pie shell. Bake 30 minutes. Remove from oven and sprinkle with crushed onion rings. Bake an additional 10-15 minutes. Let stand 5 minutes before slicing.

Salmon Quiche

This quiche was a favorite of our family. It tastes amazing. Maxine liked to make it for a nice dairy Shabbat lunch.

Ingredients:

1 large 15 ½ ounce can of Red Salmon flaked and drained
A juice of 1 lemon
4 T mayonnaise
2 eggs
1 T mustard
½ cup half and half, coffee rich, or plain yogurt
1 cup of onion rings

What to do?

Mix all together and put the mixture in a pie crust. Bake at 350 degrees for 30 to 40 minutes.
