Ami's Favorite - and has been since 3 year old nursery school!
Ingredients:
1/2 pound Parmesan cheese grated
1 pound Fettucini Noodles
8 oz. Container heavy cream
1 stick Butter or margarine
Salt and pepper to taste
What to do?
Boil Fettucini noodles according to directions on box and drain. In a small saucepan melt 1 stick of butter or margarine with cream over low heat heat. Drain pasta and into warm bowl. Pour butter and cream over noodles and toss. Toss in 1 cup of Parmesan grated cheese. Sprinkle with salt and pepper. Serve on warm plate with additional grated cheese on the side.

Janis Rice
Maxine got this recipe from her friend Janis, which became a family hit known as Janis Rice.
Ingredients:
1/4 lb Margarine
3 cups Fine Noodles, uncooked
1 cup minute rice
1 package Onion Soup
3 cups boiling water
What to do?
Brown Noodles. Add rice and onion soup. Add water, cover and cook on low.

Blintze Souffle
Once Maxine discovered this recipe it became a staple for many dairy meals and a family favorite.
Ingredients:
12 frozen blintzes
½ cup orange juice
6 eggs
1 cup sour cream
1 t vanilla
½ cup sugar
A pinch of salt
½ to ¾ stick margarine or butter
What to do?
Grease a large baking dish big enough to hold all the blintzes. Blend all the ingredients together and pour the mixture over the blintzes. (You do not have to thaw the blintzes) Sprinkle with cinnamon and bake 1 hour at 350 degrees.

Spanakopita (Spinach Pie)
It’s a long recipe but very worth it in the end. This dish is how I first started liking spinach. I tasted it at a friend’s house and Maxine started making it once in a while after she found out I liked spinach.
Makes 30 Pieces
Ingredients:
4 10-oz. boxes frozen spinach
2 T butter plus 1¼ cup melted
¼ cup olive oil
1 bunch scallions, chopped fine
1 large yellow onion, chopped fine
½ cup fresh dill, chopped fine
1/3 bunch fresh parsley, chopped fine
1 lb. creamed cottage cheese
1½ lbs. feta cheese
8 large eggs
1 lb. prepared phyllo dough
¼ cup grated romano cheese
½ t salt
What to do?
Cook thawed spinach in boiling salt water for 5 minutes. Remove from heat, drain and press out the liquid. In a small frying pan, melt 2 T butter with ¼ cup olive oil and add scallions, yellow onion, dill and parsley and sauté until golden brown. In a large mixing bowl, combine crumbled feta and cottage cheese, drained spinach, onion mixture and 8 slightly beaten eggs. Mix well.
Melt remaining butter in a small saucepan. With a pastry brush, butter a 17 by 11½ by 2¼ inch baking pan. Place 1 phyllo sheet in pan and allow the phyllo to overlap sides of the pan. Add another sheet and using pastry brush, brush lightly each phyllo sheet with melted butter. Repeat procedure until there are 12 layers of buttered phyllo sheets on the bottom of the pan. Pout spinach/cheese mixture slowly over phyllo sheets in pan and spread evenly. Sprinkle grated cheese and ½ t salt over spinach. Repeat procedure for brushing each phyllo sheet until the remaining phyllo sheets (about 12 sheets) have all been used. Top phyllo sheet should be brushed heavily with butter to assure golden brown color. With a sharp knife gently cut through the layers of the phyllo, making 6 lengthwise cuts. Bake in a 350 degree oven for 1 hour. Let cool for 2 minutes, then cut into diamond shaped pieces.

Tuna Noodle Casserole
I clearly remember my mother making this dish for the four of us for a typical family dinner during the week. She definitely knew it was one of our favorites!
Ingredients:
1 can of cream of mushroom soup
½ cup milk
1 cup cooked peas
2 T chopped pimiento (optional)
2 cans (about 6 oz. each) tuna, drained and flaked
2 cups hot cooked medium egg noodles
2 T dry bread crumbs
1 T margarine, melted
What to do?
In 2 quart casserole dish mix soup, milk, peas, pimiento, tuna and noodles and bake at 400 degrees for 20 minutes or until hot. Stir and sprinkle bread crumbs mixed with margarine over tuna mixture. Bake for 5 more minutes or until bread crumbs are golden.

Sari’s Dairy Quiche
Sari Kronish gave my mom this Kronish family recipe and she really enjoyed making it and we loved eating it.
Ingredients :
1 large plain yogurt
3 eggs
1 T flour
1 T onion soup mix
½ bag grated cheddar cheese
What to do?
Mix it all together and put it in pie shell. Cook uncovered for 1 hour at 350 degrees. During the last minutes turn up the oven temperature so it gets brown.

Salmon Quiche
This quiche was a favorite of our family. It tastes amazing. Maxine liked to make it for a nice dairy Shabbat lunch.
Ingredients:
1 large 15 ½ ounce can of Red Salmon flaked and drained
A juice of 1 lemon
4 T mayonnaise
2 eggs
1 T mustard
½ cup half and half, coffee rich, or plain yogurt
1 cup of onion rings
What to do?
Mix all together and put the mixture in a pie crust. Bake at 350 degrees for 30 to 40 minutes.

Maxine received this recipe from her best friend Janis as an easy, lowfat alternative for carrot kugel and over time it became another family favorite!
Ingredients:

1 teaspoon vanilla
2 cups of flour
1 teaspoon of baking soda
3 jars of baby food carrots
4 eggs
2 teaspoon baking powder
2 teaspoon cinnamon
½ cup oil
½ cup apple sauce
What to do?
Mix all together and put in baking pan. Bake at 350 degrees for about 30 minutes. Couldn't be easier!

This kugel was Davida and Ami’s childhood favorite, no question!
Ingredients:
1 cup grated carrots
¾ cup solid Crisco
1 cup brown sugar
2 eggs
1 and ¼ cup flour
1 teaspoon lemon juice
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
What to do?
Sift the baking powder, baking soda, salt, and nutmeg together. Mix Crisco and sugar together. Add eggs and beat well. Add dry, sifted ingredients to mixture. Add carrots and lemon juice last. Put in ring mold. Grease it slightly to aid in removal of the mold at the end. Bake for 45 minutes in 350 degrees.

2 cups tomato juice
1/3 cup olive oil
5 tablespoons lemon juice
garlic juice or minced garlic
1 teaspoon of sweet basil
1 teaspoon salad herbs
dash of Tabasco sauce
salt, pepper, sugar - to taste
What to do?
Mix all ingredients. Chill at least 2 hours. Serve with diced cucumbers, sweet onion, green pepper, celery and croutons. Easy and yummy as pie!

2 ½ cups flour to 3 cups of flour
½ teaspoon salt
5 tablespoons of sugar
1 tablespoon of oil
1 cup of water 105 to 125 degrees Fahrenheit (usually around 115 degrees Fahrenheit)
1 egg and 1 egg white
little cinnamon and nutmeg
What to do?
Put the above mix into the bread machine on the sweet bread-manual.
Take out and divide into 2. Make 5 smaller balls of dough and 1 larger one.
Put in a 6 inch aluminum foil pan.
Put in a warm place to rise for 30-45 minutes.
Finally, put it in the oven on 350 degrees for 20 to 30 minutes.

Kids love it! Maxine's kids always looked forward to her making it!!
Ingredients:
1 pound of spaghetti noodles
4 scallions

soy sause, sesame oil, rice wine vinegar, hot chile oil
To dress:
4 tablespoons of toasted sesame oil
4 tablespoons of soy sauce
1 tablespoon of rice wine vinegar
½ teaspoon hot chile oil
What to do?
Boil spaghetti and cool. Chop the scallions. Mix together. Dress.
